Watermelon Fruit Leather

There is such an abundance of fruit in the summer! Such a wide variety it's hard not to go wild at the market. So I went wild, everything was delicious but the watermelon. It was mushy and pretty bland. This is frustrating since I walked to the market, bought the fruit, carried it home, made room for it in the fridge… Too much was vested in the fruit to let it go to waste!

After some internet brainstorming, I decided to make the watermelon leather.



My daughter loooved them. She ate them all, I hardly got a photo of these. My son had a few bites and moved on. I didn't take it personally as he seems to do that with everything nowadays. Ahuvi (my love) said he was never a fan of fruit leather and this one did not sway to be a fruit leather lover. All and all I call this a success.




Watermelon Fruit Leather

½ a watermelon

2 tbs maple syrup

¼ tsp vanilla extract

Blend the watermelon meat with a blend stick or blender, until smooth. Strain through a cloth and put pulp back in the blender. Blend the pulp with the maple and vanilla. Line cookie sheet with parchment paper and apply an even layer, about ¼ inch thick. Put in a dehydrator or oven over night. The oven setting should be the lowest possible on turbo. Dehydrator should be also the lowest setting.

Cut it into strips and roll them up.
